Roasted Red Pepper Shakshuka

Ingredients:

  • 2 Tbsp olive oil
  • 1 jar of Neal Brothers Organic Robust Red Pepper pasta sauce
  • 1 large red bell pepper, seeded and thinly sliced
  • 3 shallots or 1 small yellow onion, diced
  • 3 garlic cloves, minced
  • 1/2 tsp salt
  • 3 Tbsp tomato paste
  • 1/2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 4 eggs
  • 1/3 cup feta, crumbled
  • Fresh herbs: mint, parsley or cilantro

Directions:

  1. Heat oil in a medium-sized skillet over medium heat. Add pepper, shallots and garlic along with salt. Saute for about 5 minutes until softened.
  2. Add tomato paste, chili powder, cumin and paprika. Cook for another 1-2 minutes until caramelized.
  3. Stir in the pasta sauce and simmer for 10 minutes.
  4. Take the skillet off the heat. Use the back of a spoon to make a well for each egg and then crack them in.
  5. Cook the eggs for 10-15 minutes, rotating the pan often. You can use a lid to steam the eggs and help the whites cook.
  6. Top with feta and fresh herbs. Serve immediately with toasted bread or pita for dipping.
