Ingredients:
- 2 Tbsp olive oil
- 1 jar of Neal Brothers Organic Robust Red Pepper pasta sauce
- 1 large red bell pepper, seeded and thinly sliced
- 3 shallots or 1 small yellow onion, diced
- 3 garlic cloves, minced
- 1/2 tsp salt
- 3 Tbsp tomato paste
- 1/2 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 4 eggs
- 1/3 cup feta, crumbled
- Fresh herbs: mint, parsley or cilantro
Directions:
- Heat oil in a medium-sized skillet over medium heat. Add pepper, shallots and garlic along with salt. Saute for about 5 minutes until softened.
- Add tomato paste, chili powder, cumin and paprika. Cook for another 1-2 minutes until caramelized.
- Stir in the pasta sauce and simmer for 10 minutes.
- Take the skillet off the heat. Use the back of a spoon to make a well for each egg and then crack them in.
- Cook the eggs for 10-15 minutes, rotating the pan often. You can use a lid to steam the eggs and help the whites cook.
- Top with feta and fresh herbs. Serve immediately with toasted bread or pita for dipping.
